Corn Fritters

An easy lunchbox idea that can be batch cooked to make lunch prep even quicker!


  • 1 large tin of corn (approx 400g)
  • 1/3 cup plain flour
  • 2 tsp baking powder
  • Salt and pepper
  • Milk (or dairy-free alternative)


  1. Add the flour and baking powder along with salt and pepper to a bowl and mix until combined
  2. Add the drained sweetcorn and begin to add a little splash of milk at a time until you get a smooth pancake consistency
  3. Heat a little olive oil in a pan over a medium heat
  4. Once hot enough, spoon tablesoons of the batter into the pan and cook until golden and then flip over to cook the other side
  5. Remove from the pan and continue until you've used all the batter
  6. Serve with some salad leaves, tomatoes and red pepper houmous for dipping

The corn fritters can be frozen and added to lunchboxes when you need them!
